I have a 2005 Copen 1.3. I have opened my radiator cap to find chocolate milkshake. There is no coolant in the oil system though as the dipstick appears normal. Does this model have an oil cooler that could be leaking into the coolant system? Or would it be a head gasket?

No oil cooler, so it is very likely a head gasket.
