Just done that on a L880K. The Instrument Panel comes out very easy. Problem is the Speedo Dial. They vary a lot between different Countries which is so annoying.
I had to keep the black Speedo on as the Japanese one stops at 140km and mine is 220km. Didn't notice that at the time.
Side ones were fine. I fair bit of fiddling to get the needles in the right position though.
Make sure you have a very full petrol tank and take notice of where your Temp needle sits before attempting to change dials.
The Ultimate models in Japan come with white dials standard. I just bought it from an Auction.

Great advise on the needle thanks- so do I have to remove the whole dash to get to the panel?

No, not at all..the steering wheel has adjustment so bring that down and back so its out of the way.
There is a plastic surround attached to the dash, which covers the screws that hold the assembly in place.
Just carefully pull at it from the top and then slip your fingers in the gap and wriggle it and it will pull straight off.
    Four clips.
Undo the screws, 4 of em I think. Then the whole Dial assemble will pull out. You need to unclip the plug electrics of course
    to get it completely out.
After that everything just unclips. The needles will be your stress out though.
Once the needles are off, a small philips screw driver will get the tiny screws out to remove the dial plates.
I found with the Tacko, if I pushed it to hard it wouldn't read properly.
So you will just have to feel it where it is on the small shaft?
The other needles are a pain so make sure you do what I said in the post above before you attempt to remove the Assembly.
You have to be firm to get the needles off.

In the end I found with the Assembly back in place & the clear cover off I could still pop the needles off and adjust them while in the car.
So don't push them to hard for a start!
I started it up and got it to running Temp to check the needle place was right.
To get the fuel one is easy when you turn on the key.
Its near impossible to get it right on the bench.
Then you can push the clear cover back on while in the car. I got good at removing it with the Assembly in place.
You can get your fingers on the clips to remove it if you make a mistake.

Successfully switched over the white dials - thanks to Marnob for the spot on advice
If anyone needs the Black dial set in MPH give me a shout, for a fair price I can let these go
